Sweet potato toasts have become quite a popular exchange to traditional bread toasts. For good reason too. Sweet potatoes are loaded with vitamins and mineral that can help prevent chronic disease, support a healthy metabolism, and are extremely rich in beta-carotene, a powerful antioxidant.

The beautiful orange stem vegetable can be used for roasting into sweet potato and cauliflower Buddha bowls, baked into Mexican stuffed sweet potatoes, thinly sliced and roasted into chips, and deliciously turned into sweet potato toast! I will show you how to make sweet potato toasts and 6 wonderful (all vegan too!) variations of how you can create them!

There is something for all cravings. We’ve got fruit filled for the breakfast lover, spicy Asian for those that like it a little hot, avocado toast with zesty lemon pepper (my favorite!), spa-like cucumber radish, peaches and cream for a little sweeter treat, and tomato pesto and olive for craving Italian-style.

My husband was a little bit skeptical about trying sweet potato toast at first. But once he tried these roasted potato slices topped with some of his favorite toppings, he could not stop raving about how delicious these recipes are!

Sweet potatoes are one of those foods that everyone should be eating. They are incredibly healthy and when eaten in slices, half a sweet potato contains only about 10 grams of carbohydrates.

How to make sweet potato toast

To make sweet potato toast you will want to roast them, not actually toast them. Toasting can be done (great to reheat) but it takes a very long time to cook them this way. Let’s keep life simple.

First, wash off the sweet potatoes and give them a good scrub to remove any dirt. Then slice off the ends. Cut the potatoes lengthwise into slices so they are about ¼-½ inch thick. Make sure to keep an eye on them  while it bakes so the thin slices do not burn.

Personally, I like mine thin, about ¼ inch so slice to what your preference is. If it is difficult to slice the potato ¼ inch, I have added times for both thin and thick slices in the printable recipe area.

Place the sweet potato slices on a baking sheet. Bake at 400 degrees for 10-15 minutes for thin slices. Thicker slices will need to bake 20 minutes until nice and soft and the edges will be a bit browned.

Top with your favorite toppings! I suggest making a large platter of the suggest toppings (one or all of them) prior to baking. Then they are ready as soon as the sweet potato toast comes out of the oven.

To make it easy here are six delicious version I highly recommend. These are great to serve as appetizers or dinner. There is usually something for everyone!

Spicy Asian Sweet Potato Toast

This toast has all the Asian flavors of sesame, cabbage, soy sauce (in the gluten-free world I use coconut amino, rice vinegar and jalapenos for a bit of kick!

  • vegan cream cheese
  • purple radish, chopped
  • jalapeno slices
  • red chili pepper
  • sesame seeds
  • Asian sauce: 2 tablespoons coconut amino, ½ teaspoon sesame oil, 2 tablespoons rice vinegar, ¼ teaspoon ground ginger
  • cilantro for garnish

Avocado Sweet Potato Toast With Zesty Lemon Pepper

A favorite avocado toast made on sweet potatoes! This is one of my favorites for lunch!

  • avocado slices or guacamole
  • grape tomatoes, halved
  • lemon pepper seasoning or salt, pepper and fresh lemon zest to top
  • fresh basil or cilantro for garnish

Cream Cheese Berry and Pistachio Sweet Potato Toast

A sweet addition for breakfast, brunch or snacks time.

  • vegan cream cheese
  • strawberries, diced or sliced
  • blueberries
  • pistachios

Peaches and Cream Sweet Potato Toast

This one is tasty for breakfast, brunch, snacks or a sweet side with a salad.

  • vegan cream cheese
  • peaches, slices
  • brown rice syrup, agave or honey for drizzle (avoid honey if vegan)
  • fresh mint leaves

Cucumber and Radish Cream Cheese Sweet Potato Toast

This one reminds me of a spa day. Light and refreshing with crisp textures!

  • avocado slices or guacamole
  • broccoli or clover sprouts
  • cucumber slices or ribbons (I love using this peeler to make pretty ribbons)
  • radish, slices

Italian Tomato Pesto and Olive Sweet Potato Toast

This is a pesto Italian pizza made on a sweet potato. It is delicious and robust in flavors thanks to pesto. Make sure if dairy-free to use a pesto made without dairy.

  • vegan cream cheese
  • grape tomatoes, halved
  • olive slices
  • top with favorite pesto
  • basil for garnish
  • chili pepper flakes for garnish

How to store roasted sweet potato toasts

The roasted potato slices can be made in advance and stored in an airtight container in the refrigerator for up to a week. You can pop them in the toaster oven on the low setting to crisp them up again before getting ready to add toppings and serve. Or reheat them in the oven on a sheet pan at 350 degrees F for a about 5 minutes or until warm.

Sweet potato toast is so simple to make! Sometimes we even top them with our favorite pizza toppings by baking it in the oven to melt the toppings. This is especially a favorite with the kids!
