No-Bake Chocolate Chip Cookie Bites

The easiest chocolate chip cookies! These vegan no bake chocolate chip cookie bites taste like a chocolate chip cookie only made without butter, dairy, gluten and an oven! A tasty energizing dessert or snack ready in less than 10 minutes.

These chocolate chip energy bites are absolutely delicious and taste just like a healthy chocolate chip cookie only there is no baking required!

No-bake energy bites or “balls” are one of our family favorite snacks to make. The kids have fun mixing the ingredients and getting their hands messy while forming the dough into mini balls.

Last year I took dinner to a family friend who just welcomed their third baby to the world. The boys and I made crockpot tex-mex quinoa and these no bake chocolate chip cookie bites for them. My friend text me later saying she needed the recipe for the chocolate chip energy balls and that everyone gobbled them up and loved them!

The best part about no-bake energy balls are that they are usually healthy and filled with natural ingredients. Most no bake bites are made with either oats or almond flour and coconut flour. These no bake chocolate chip cookie bites have a combination of oats, coconut flour, gluten-free flour, chia seeds and flaxseed meal. These are the root ingredients. Then natural flavors and sweeteners of maple syrup, almond butter, vanilla and cinnamon are added and the vegan chocolate chip morsels are just the icing on the cake!
