When you wake up in the morning are you the person yearning to head straight for the kitchen for breakfast? Or do you prefer to get ready and eat about an hour after you wake up? My hubby loves breakfast later in the morning and the little’s and I like to crawl out of bed and directly to food as soon as our eyes pop open.

I just like food. A lot.

My morning routine begins by pressing “start” on the coffee maker. No one can chat with me until I have had my warm cup of joe. Then two hungry little boys need something quick as we are usually in a hurry to make it to school on time. These energy balls are one of my favorites because I usually make them the night before. That way all the sweet flavors of coconut and oatmeal and sugary maple syrup have time to blend together so they are ready for a fast fuss-free meal or snack the next day. Quick and convenient is my morning jam. Do you feel me friends?

My family is always fueled to satisfaction after these mouthwatering oatmeal energy balls in the morning! I like to also bring a few to the gym and enjoy them after a workout to replenish nutrients in my body.

How to make no bake coconut oatmeal chocolate chip cookie dough energy bites

Please first note that if you are cautious of eating raw flour – heat treat the flour first. Then, melt the coconut oil in the microwave for 30 seconds in a medium size bowl. Add the rest of the ingredients except the chocolate chips and mix to form a dough. Let it cool slightly then add the chocolate chips (cooling prevents the chocolate chips from melting). Chill for about 5 minutes in the refrigerator. Line a baking pan with parchment paper. Roll the dough into 1 inch balls and set on the parchment paper. Chill to harden for about 15 minutes and then store in an airtight container in the refrigerator.

To top off all the healthy ingredients, there is also flax seed meal in these energy balls and they are nut free. Flax seeds, when ground, excrete powerful vitamins and minerals which the body absorbs greater than if eating the seeds whole.

3 Tablespoon serving of flaxseeds in these energy balls contains:

  • Omega-3
  • Fiber 8g
  • Protein 6g
  • Vitamin B1, B6
  • Manganese
  • Magnesium
  • Phosphorus
  • Selenium
  • Iron
  • Potassium

Flax meal can easily be added into oatmeal, muffins, smoothies, bars and no bake energy balls. These are so easy to make, healthy and delicious! Comment below and let me know what you think!
