Baked oats are old fashioned rolled oats blended in a blender with banana, egg (protein!), flavoring, leavening agent, dash of salt, and a sweetener.
The result of this blended oats mixture is a cake and muffin consistency. Baked oats are different from baked oatmeal and protein oatmeal yet similar to blender banana oat pancakes in that the oats are made without milk and blended to make the texture moist and soft like you would get from using flour.

Blender baked oats are then turned into various flavors. The base plain version has a banana taste similar to banana bread and can then be turned into various other flavors! Start with a basic vanilla flavor with this easy glaze icing and also try our other flavors of chocolate, plump blueberry, and peanut butter banana!
This easy recipe makes one serving in an 8-ounce ramekin and can be multiplied then divided into a few ramekins for a crowd.
Basic recipe for baked oats:
- Old fashioned oats – If you are gluten-free, make sure to use a certified gluten-free version of oats.
- 1 ripe banana
- 1 egg
- maple syrup
- vanilla extract or vanilla bean paste
- baking powder
- dash of pink salt – We use pink salt for its high mineral content which is incredibly healthy.
For flavor variations use the basic recipe and add these ingredients that are detailed below.
- Chocolate baked oats– cocoa powder, dark chocolate chunks, milk chocolate chips (optional to use vegan dairy-free chocolate morsels).
- Vanilla baked oats– add the glaze with confectioners’ sugar and water. I also like to add a sprinkle of vanilla bean powder.
- Blueberry baked oats– fresh juicy blueberries or another favorite berry such as raspberry or strawberry.
- Peanut butter banana baked oats– peanut butter, cinnamon and banana slices.
How to make baked oats
Blend in a blender: Spray an 8-ounce ramekin with cooking spray. Add the oats, banana, egg, vanilla extract or vanilla bean paste, baking powder, and a dash of salt to the blender. Blend on high until smooth.
Add to the ramekin: Add the oats mixture to one ramekin, or if you did a few servings of this recipe, divide the mixture evenly into each prepared ramekin. Let it set for 5-10 minutes. Leave as is or mix in the flavor variations into each.
Baking time! Bake at 350 for about about 25-30 minutes or until done and the top is set.
Tips for the best baked oats
- Spray a ramekin with cooking spray prior to baking. The oats will stick to the sides otherwise.
- Use a high powered blender to make sure the oats blend to a smooth consistency. It is easier to blend if you double or triple the recipe and add more ingredients at once.
- Let the oat mixture set after blending and pouring it into a ramekin. Let the oat mixture set after it is blended to help the moisture to absorb into the oats. This results in a fluffier “cake”.
- Old fashioned rolled oats work best. Do not use steel cut oats. They will not soak and blend as well and the result with be crunchy tasting.
Chocolate baked oats: Mix in 1 tablespoon of cocoa powder, 1 tablespoon of chopped dark chocolate chunks, and 1-2 tablespoons of milk chocolate chips to the basic recipe.
Vanilla baked oats: Top with a glaze made of confectioners’ sugar and water after baking the blender oats. In a small bowl mix together with a fork three tablespoons confectioners’ sugar or Swerve sugar-free powdered sugar with ½ to 1 teaspoons of water until you get an icing consistency that is easy to spread.
Blueberry baked oats: When the basic recipe is in a ramekin then mix in ¼ cup fresh juicy blueberries or another favorite berry.
Peanut Butter Banana
Peanut butter banana baked oats: Mix in ¼ teaspoon cinnamon and top with 1 tablespoon of peanut butter. Press it down to set to the center and top with a few banana slices then bake in the oven.
Baking oats for one or more
This basic recipe is for one, like a mug cake! There are various sizes of ramekins to use such as 4 ounce, 6 ounce and 8 ounces. I find that using an 8 ounce dish works best and makes it easy for mixing in extra toppings and fillings. You can order 8 ounce ramekins in a pack of 6 (affiliate link). Definitely not! Baking soda is an acidic element and baking powder is a combination of three ingredients: an alkaline, acid, and a neutralizer. Mixing up the two will alter the flavor and it will have a powerful baking soda taste.
