Baked Chilean Sea Bass with Orange Marinade and Salsa

Chilean sea bass is our families favorite type of white fish to eat. It is light and mild with beautiful texture and incredible flavor that is not “fishy”. It pairs lovely topped with citrus salsa and pulls in flavors it’s marinated in. What is Chilean sea bass

Chilean sea bass, a Patagonian toothfish, is a white fish that is thick like a steak and mild in flavor. It is found wild in cold waters in southern Atlantic, Pacific, and Indian Oceans. The taste is similar to cod fish and can be eaten alone or in tacos. Sea Bass is wonderful to add to your healthy diet as it is healthy, high protein, and low in carbohydrates.

Key ingredients for baked sea bass

  • orange juice
  • soy sauce (gluten-free)
  • rice vinegar
  • garlic powder
  • Chilean sea bass fillet skin on and aim for even thickness that is about 2 inches thick
  • avocado oil or olive oil
  • pink salt or fine sea salt
  • paprika
  • fresh cilantro leaves, red peppers, jalapenos for garnish

Recipe directions

STEP 1: Mix together the marinade ingredients.

STEP 2: Grease the sides and bottom of a 9×13 inch baking dish with butter or cooking spray to prevent the juices from sticking during cooking. Add ⅓ of the marinade to the bottom of a baking dish. Top it with the Chilean sea bass fillets (skin side down) and sprinkle the fish with the salt and paprika, and pour the remaining marinade top. Cover lightly with foil.

STEP 3: Heat the oven at 450 degrees F and bake the Chilean sea bass covered for 20 minutes and until the internal temperature reaches 130 degrees F. Remove the foil and roast in the oven for another 5 minutes or until the internal temperature reaches 145 degrees F. Top with salsa and freshly sliced jalapenos and red chili peppers. Enjoy right away.

Tips for cooking sea bass

The size of the fillet (also known as steak due to the thickness) of Chilean sea bass varies and may alter the cooking time. It can be very thick or thinner. When cooking sea bass a good rule of thumb is to bake it in the oven for about 10 minutes per inch of thickness. Also use a meat thermometer to ensure it reaches 145 degrees F internal temperature when inserted into the thickest part of the meat.
